About Katsu Knives

KATSU is the flagship brand of G&M Industrial Co., Ltd., headquartered in Hong Kong with offices in mainland China and Japan. The brand fuses traditional Japanese blade design with modern materials science — ZDP-189 super steel, AUS-10, Damascus, 17-layer convex grinds — finished using techniques like superficial wire-drawing, DLC coating, multi-color oxidation, and deep titanium plating.

Many KATSU blades are heat-treated in Japan and designed in collaboration with renowned smiths including Tomoyuki Nemoto (根本朋之) and Nakayama Hidetoshi (中山英俊). The result: production knives with custom-shop feel, at prices that won’t make you flinch.

Why I cover Katsu on Tactile Carry: Most knives I review live in the budget-to-midrange lane. Katsu sits a tier above — premium steels (ZDP-189, M390), real titanium and carbon fiber, Japanese heat treatment — but at prices well under the boutique customs they ape. If you’ve already worked through CRKT, Sencut, and the AliExpress titanium scene and want a step up that still feels accessible, this is the brand worth your attention.
